True Lemon Chicken Meatloaf
Description
Make ahead for a time saving meal! A healthy & delicious alternative for those cutting down on red meat.
Ingredients
1 medium onion, chopped
1 celery rib, chopped
3 cloves garlic, crushed
1-1/4 cups canned chicken and rice soup
1/2 cup fresh breadcrumbs
1/4 cup grated Parmesan cheese
3 packets of True Lemon
1-1/2 lbs. ground chicken
salt and pepper to taste
Directions
1. Preheat oven to 350 F.
2. Combine first 7 ingredients in a medium bowl.
3. Add ground chicken and salt and pepper to taste and mix well.
4. Transfer to an 8x4 inch loaf pan.
5. Bake about 1-1/4 hours or until a meat thermometer inserted in center of loaf reads 160 F.
6. Let stand 5 minutes before slicing.
